I wanted to make a caprese risotto and Tina wanted orzo. So we settled on orecchiette a la caprese.
Tina and I made it together. She cut the cherubs, fresh mozzarella, basil. I boiled the pasta in chicken broth, sauteed red bell pepper with red onions and the cherubs, & toasted pine nuts. Although I said capresem I lied.. I repaced the balsamic with lemon to add some freshness and brightness to the pasta. It was creamy and delicious.. Not quite sure how that happened, but it was perfect.
Sometimes our differences make for a yummy pasta salad. The perfect way to finish a long night (Rockets lost.. Ryan was dissapointed).
