Listen here.. I love my husband very much and I know he loves me, too. But there is something else that he loves and that is knefeh.
In honor of his birthday week, I decided to try my hand at knefeh..with Sarah's assistance. Talal called Sarah and told me wha tot do for this short-cut knefeh.
I sliced the crust off a loaf of white toast and blitzed them in the food processor. Once done, I poured melted butter in, mixed them and tightly packed them on the bottom of my 9.5 inch pie dish. On top of that I placed shredded mozzarella while I readied the bottom layer. In a small pot, I cooked semolina and water until it became a paste and the semolina grains were cooked through. I tossed in a small handful of mozzarella. I spread the mixture onto the knefeh as the third and final layer.
I bakes it at 350 degrees until the edges started to brown. I flipped it out and it was great.. great looking at least. Talal didn't even wait before digging in. So, I asked him, "on a scale of 1-10?" Talal gave me a 5.
So.. there's still work to be done, but here's to Talal's love of knefeh!
