Despite being stuck in the middle of a pandemic, we found ourselves celebrating two happy occasions - Mother's Day and Tina's 25th birthday.
To honor the occasion, I offered to make brunch. *Twist my arm*
I've mentioned my recent infatuation with the yogurt and smoothie bowls during week 9 (I think) of self-quarantine. I decided that it would serve as inspiration for the meal. The theme - COLORFUL. So, I started thinking of the items that would fit that theme. While thumbing through a book Tina gave me a couple Christmases ago, I found a beautiful photo of pink deviled eggs and just like that, the ideas didn't stop coming...
Colorful Mimosas with tangerine or blood orange soda
Labne Dip with Colorful Chips - Central Market's Sesame Red Beet Chips were a surprise success, not that I ever doubted H-E-B
Avocado Toast with Radishes
Mini Pancakes with Homemade Blueberry Sauce, of course!
Breakfast Pizza - the biggest hit with some new toppings: steamed spinach, H-E-B Italian Hot Sausage, mozzarella, parmesan, calabrian chili peppers and thinly-sliced, fresh garlic
A Savory Kale Salad - to appeal to those who loves salads *cough cough daddy*
So, like that, we enjoyed a morning with our rose-colored glasses on..
